Since the 2020 vintage, Domaine de la Périnade has used nitrogen blanketing in its cellar. A simple and effective technique for preserving the quality of our white and rosé wines.

Why Nitrogen Blanketing?

Oxygen is the enemy of delicate white and rosé wines. During racking, bottling or tank storage, contact with air can cause premature oxidation, dulling aromas and altering colour.

Nitrogen, an inert gas naturally present in air at 78%, creates a protective cushion on the surface of the wine. It displaces oxygen without any chemical interaction with the liquid, keeping intact the freshness and vibrancy we seek in our white and rosé cuvées.

Careful Implementation

Nitrogen blanketing is now systematic for our white wines — Sauvignon 1830, Les Frenchies Chardonnay — and our rosés. Before each transfer, we saturate tanks, pipes and bottles with nitrogen to guarantee an oxygen-free production chain.

Combined with the strict temperature controls already in place since the 1990s, this practice allows us to deliver wines that retain their full aromatic expression all the way to the consumer's glass.
